This New York style bar matches the interior to the spirit. Dark and cosy, its one of the best-stocked bars in Sydney. There are a staggering 800 whiskies on the list, but thankfully the staff know what theyre doing. If you cant decide, let them guide you to your new favourite tipple which you can enjoy straight-up, on the rocks or in one of their ingenious cocktails.

This small bar in a Surry Hills laneway is a paradise for Japanese whisky lovers. The list is regularly updated as they make new discoveries, but they feature some of the most popular and bottles from boutique distilleries. To accompany the whisky, theres a select menu of Japanese treats including various yakitori and kushiyaki, katsu chicken, gyoza and tuna sashimi.

Inside the historic Angel Hotel youll find this opulent cocktail bar, styled to take you back to the glory days of the 60s and 70s. As well as some of the best whiskies from around the world, theyve created a daring cocktail menu to highlight whisky in a new way. Try the Chilean Rose (Aberlour 12yo, Noilly Prat, lemon, chilli syrup, rose water and egg white), the Highland Tai (Aberlour 12yo, Laphroiag 10yo, apricot brandy, oloroso, lemon, orgeat, bitters and fruit leather) or the Raisin Mona Mac (Bulleit 95 Rye, Noilly Prat, Pedro Ximenez, ginger and mint).
