From the kitchens of 121BC, Vini, Berta, Billy Kwong, and Rockpool, Mat Lindsay had already made a huge contribution to the plates and stomachs of Sydney-siders long before he decided to open his own restaurant in 2013.

Describing his journey as being thrown in the deep end, Mat has moved from strength to strength, serving up elegantly delicate dishes from the heart of his wood-fire oven.

Awarded the 2018 Chef of the Year Award by the Gourmet Traveller Restaurant Guide Awards, Mats well-publicised successes in the kitchen of Ester have prompted hungry patrons in search of incredible wood-fired dishes to seek out Mats restaurant in the streets of Chippendale.

With his wood-fired delicacies coming in ahead of the classic wood-fired favourites (aka just pizza) and extensive wine list, Ester is all about the fresh and seasonal vegetables, aromatic herbs, and authentic smoky flavour.

Utilising his wood-fired finesse for more than just cooking pizzas, Mats skilful culinary delights include wood-fired oysters cooked in the 500-degree oven, complemented by sesame seed-rolled carrots, leeks and romesco sauce.

Spending much of his childhood in NSWs Wauchope, Mat later made the move to Sydney in 1999, to pursue a career far from the aromatic kitchens he now calls his office.

Initially commencing a career in graphic design, it wasnt until later when Mat found himself immersed in the gastronomic culinary scene, where Mat soon built an appreciation for the art of simplicity, leading him ultimately to construct an entire restaurant built around the simple ideals of wood-fired cooking.

Renowned for his roasted cauliflower dish among others, Mats humility is as much a key ingredient to his dishes as the fresh produce is, combining simplicity and seasonal produce to create some of Sydneys best wood-fired dishes (which arent pizza)!
