A Sydney ramen classic. Any ramen lover worth their weight in noodle has paid homage to the ramen shrine that is Gumshara Ramen. Owned by Japanese expat Mori Higashida, who missed ramen from his homeland, the ramen here is wonderfully authentic. If youre a newbie, be sure to go for their signature tonkotsu ramen with its super thick and collagen-y broth. Add eggs, chilli bomb and other toppings to taste and then hustle for a table in the busy Eating World food court.

Weve heard of lines around the block at the NYC outpost of Ippudo. Fortunately, the Sydney store, while busy, is not nearly as much of a wait. Originating in Japans ramen capital of Hakata and then expanding to our beautiful shores, expect thinner, al dente style noodles and an almost creamy broth (in the best possible way). Shiromaru (white) and Akamaru (red) ramen are the classics and leave some space for their signature freshly steamed buns.

Tucked away in World Square sits Ramen Zundo, easily one of the best ramen spots in Sydney. Using stock thats been lovingly created over 12 hours, the broth is rich and filled with umami goodness. Theres a range of styles to suit all preferences and appetites, but we cant go past their tsukemen which come with thick, chewy noodles ready to be immersed in a flavourful dipping sauce.
