Hell be furiously chopping and frying over two days, pumping out wagyu beef cheek, pork belly and tofu “Japa-Dawgs”, which are soft bao buns filled with an assault of flavour and texture. And dont miss the soft shell crab nori taco and wasabi fried sides – because, well, we dont know when Mr Miyagi will be back to Sydney.
And for dessert, Messina are making a sweet, warm (yes warm) Japanese cheese tart.

Spider Crab Taco – Tempura soft shell crab, sushi rice, guacamole, pickled jalapenos and curried mayo in nori taco shell.
Truffle Wagyu Beef “Japa-Dawg” – Panko crumbed wagyu beef cheek (5+ score), burgundy onion jam, potato puree, black truffle mayo in a soft bao roll.
Tempura Tofu Beetroot “Japa-Dawg” – battered tofu, carrot slaw, ramen spice, spicy mayo, beetroot bao roll.
Crunchy Tonkatsu – Panko crumbed 48hr pork belly, pickled cucumber, sushi ginger, tonkatsu sauce, iceberg, young coriander, toasted sesame and Japanese mayo in a soft bao roll.
Mr. Ms Wasabi Fries – Golden fried, ramen seasoning, wasabi mayo, wasabi sesame furikake.
