Each Monday in August, Melbourne’s favourite underground dining adventures Private Dining Room will partner with Messer to host a series of special dinners, each catered by a curated team of some of Australia’s hottest talent.
Each week will feature a collaborative five course menu with paired beverages from a chef, pastry chef and sommelier or winemaker team. Interstate visitors include Chef Paul Farag from Josh Niland’s Fish Butchery in Sydney and from South Australia, The Summertown Artologist’s Brianna Smith and Penny Hill Winery’s Chris Chilvers.
Melburnian participants include winemakers Jasmine Wakely (Le Timbre Wines) and Brodie Comer (upcoming Yugen Wines), pastry chefs Kay-Lene Tan (Tonka) and Eigin Ting (L’Hotel Gitan), as well as members of the Messer home team.
Private Dining Room Founder and Sommelier Tim O’Donnell says, “We’re aiming to promote collaboration and stimulate creativity within our industry, and very excited to see what each team puts on the table”.
Now in its fourth year and continually evolving, Private Dining Room is firmly established as Melbourne’s most cherished underground dining adventures. Each event invites Melbourne’s dining savvy to a secret venue, revealed on the day, to experience a bespoke six-course menu with matched international and local wines and spirits, curated by Founder and Sommelier Tim O’Donnell, who has recently completed a Diploma in Wine and Spirits from the Wine and Spirits Education Trust.
Since 2015, O’Donnell’s event series has provided a creative outlet for Melbourne’s most inspiring chefs, stepping away from the confines of their ‘home menu’ and stepping up to the pass. O’Donnell’s concept supports and nurtures a generation of young talent, at a stage in their careers that can often be disheartening, fraught with tough working hours and highly competitive environments.
