Melbourne folk take the ease of good coffee for granted. Theirdaily (or twice daily) dose of the good stuff is as abundant as air these days and available whenever and wherever the craving hits. Of course, its assumed that Melbourne coffee has always been this way. People tend to believe that Melbourne just happened to give rise to Master Roasters and bearded baristas with a flair for flavour. Well, the truth is that before Atomica Coffee came to town, Melbournians were drinking bad coffee just like everyone else!

Over 22 years ago Tolly set up shop as Australias first ever in-house roaster, getting the bean rolling before anyone else! And, given its place in Australian coffee history, it makes total sense that the Atomicas roast is the superstar of this months Coffee Scout subscription box.
But rewind a fuzzy 30 or more years ago and Tollys destiny as a founder of Melbourne coffee culture wasnt immediately apparent. The Marketing and Economics graduate was gearing up for entry into the corporate world. I lasted all of three months! Tolly recalls, laughing. It was after I went on a 9 month trip to Greece to discover my roots that I stumbled into a hospitality gig. Within the first hour I was having a great time. That formative experience set in motion the founding of Tollys coffee empire. Back home in Melbourne I set up a caf in the Prahran market and got busy creating my own blends and developing my palate. But it was when an opportunity came up to take over a failing bakery in Fitzroy that things really took off.
The new Fitzroy digs soon became Atomica Caf, the place where Tolly was able to experiment and deepen his understanding of coffee roasting. I have always loved the process of blending and perfecting coffee, he says. And from the earliest days at Atomica Caf our coffee struck a chord we had lines out the door after only a year in business. Atomica Cafsuccess also signalled the very beginning of Melbourne’s love affair with buying beans to grind and enjoy at home. People started to want to buy bags of our blend, and thats when things really took off. Tolly says.
These days, Tolly is deservedly proud of the coffee company hes built. The caf is history, but he now has a 5 year strong factory running at capacity and an experienced team by his side. Hes keen to make sure that Melbourne and Australias connection to Atomica Coffee remains alive and well. Our product is world class and I know that weve got something special here, he says.
