Hidden in the quiet backstreets of Industrial Bayswater is an amazing roastery. Precision Coffee has an incredible eye for detail and a wealth of knowledge about coffee. Owner, Nic, has the very special spot as our first roaster for the new year – and for one good reason – his coffee is amazing.

Nic has been in a number of positions within the coffee industry, starting out as a barista – and as his passion and knowledge of coffee grew, so did his career. Initially Nic was head roaster at a large national roaster and is now taking the step ahead to own and run his own coffee roastery.

 

Nic has been roasting for 9 years and has the knack for making some absolutely amazing coffee, we spent quite a lot of time hearing his stories of how he learned the process of making a good roast and the tribulations that come along the way. We asked about his process of roasting, he replied I choose my green beans very carefully. Ongoing supply and consistent quality are essential. I roast to a broad range of profiles to get plenty of variety from a very narrow selection of green beans. I always roast with an ideal brew style in mind. Some roasts are for drinking black some are specifically designed only for drinking with milk and some are part way between the two.

The roast Nic has chosen for the first Coffee Scout box is his most popular blend Prestige. It’s a smooth body blend that goes well with milk or black. Nic made us both styles and we now understand why it is his most popular blend. With milk its sweet and chocolatey with fudge and honey undertones. Black, it is dark and full flavoured with spice and cocoa.

It is a blend of beans from Colombia, India and Brazil, sourced from similar altitudes. Nic sources his beans from suppliers that place a focus on transparent, reliable supply chains where the importer has direct contact and an ongoing relationship with the farmers. This helps provide an efficient and profitable supply chain for the producer.

Going into the future Nic says, I would love to see a supply chain from farm to cafe where everyone wins. Where consumers get a quality coffee that tastes the way they like it and where every person along the way gets a good wage and quality of life.

So this month, we have amazing coffee, sourced from great suppliers and roasted by a very passionate and interesting man, this is a recipe for a wonderful cup of coffee.
